Cranberry Muffins

Yield: 12 muffins

Ingredients

3/4 cup Simply Orange

2 cups flour

3/4 cup sugar

1 teaspoon baking soda

1/2 teaspoon salt

1 cup fresh cranberries

1 egg

1/4 cup vegetable oil

1 teaspoon grated orange rind

Directions:

Combine dry ingredients and stir in fresh cranberries.

Beat egg, Simply Orange, oil and orange rind and add to dry ingredients.

Stir to moisten, then spoon into greased muffin cups. (fill 3/4 full).

Bake for 15-20 minutes at 400 degrees until lightly browned and firm to the touch.

Serve and enjoy!
