Fisherman's Spicy Cajun Grilled Fillet Stew

This stew is as easy as it sounds, just simmer, stir and serve.

Yield: 4 servings

Preparation Time: 5 min; Cook Time: 20 min

Ingredients

2 packages (4 fillets) Gorton's All Natural Cajun Style Grilled Fillets (7.1 ounce pkg)

2 tablespoons vegetable or olive oil

1 small onion, chopped

1 medium green pepper, chopped

1 carrot, diced

1 clove (large) garlic, minced

1 can (15 ounce) diced tomatoes

1 can (8 ounce) no salt tomato sauce

1 1/2 cups dry white wine or tomato juice

1 teaspoon dried basil

1 teaspoon dried oregano

1/4 teaspoon red pepper flakes

1 bay leaf

Directions:

Heat oil over medium heat in a large non-stick skillet for 2 minutes and saute onions, green peppers, carrots and garlic for 5 minutes.

Add remaining ingredients, bring to a boil, reduce heat to medium, add Gorton's All Natural Cajun Grilled Fillets, cover and simmer for 10 minutes.

Break fish apart, stir, simmer 5 minutes, stir and serve immediately.
