Spicy Black Bean Salsa

Brighten beans with the color and flavor of corn kernels, red pepper, and green onion. Mix it up and let the flavors blend overnight for a sensational salsa.

Preparation Time: 20 min; Total: 4 hours

Ingredients

1 can (15 ounce) organic black beans

1 can (15 ounce) organic pinto beans

1 can (15 ounce) organic whole kernel corn

1 medium organic red pepper, chopped

1/2 cup sliced green onion

1/3 cup finely chopped organic fresh cilantro

1 medium jalapeno pepper, seeded, finely chopped

2 teaspoons organic frozen chopped garlic or 1 clove, minced

1 can (14.5 ounce) organic diced tomatoes

1 cup organic Italian dressing

1/2 teaspoon organic sea salt

tortilla chips

Directions:

Place black beans, pinto beans and corn in a colander, rinse and drain well.

Place beans, corn, red pepper, green onion, cilantro, jalapeno and garlic in a large bowl and toss to combine.

Add tomatoes, dressing and salt; toss again until well mixed.

Cover and refrigerate at least 4 hours or overnight for flavors to blend. Serve with tortilla chips.
