Hummus Flatbread with SunDried Tomatoes, Spinach and Pesto

Yield: 6 servings

Preparation Time: 15 min; Cook: 2 min

Ingredients

2 teaspoons olive oil

2 1/2 ounces fresh baby spinach

3 flatbread or naan

1 container (10 ounce) Sabra Roasted Pine Nut Hummus

1/4 cup sundried tomatoes, drained

2 tablespoons pine nuts

1/4 cup pesto sauce

1/3 cup feta cheese crumbles

Directions:

Heat olive oil in a skillet over medium heat. Add the spinach and cover. Saute until the spinach is wilted, stirring occasionally, about 2 minutes.

Toast the flatbread (naan) on a skillet, in the oven or a toaster.

Smear hummus liberally over the flatbread. Layer with sauteed spinach, sundried tomatoes and pine nuts.

Drizzle with pesto sauce and sprinkle with cheese.

Cut into pieces and serve.
