Cipolline Onion Pizza

Yield: 8 slices

Ingredients

3 Tablespoons extra virgin olive oil

1 homemade or refrigerated pizza dough

4 ounces mascarpone cheese

6 ounces crumbly Gorgonzola cheese

4 ounces fresh Mozzarella, sliced

1/4 cup balsamic Cipolline onions, sliced

Directions:

Preheat oven to 400 degrees F

Coat the pizza pan with extra virgin olive oil.

Spread the pizza dough evenly to all edges of the pizza pan.

Spread Mascarpone over the pizza dough.

Top with slices of Gorgonzola, Fresh Mozzarella and cipolline onions.

Bake for 10 to 15 minutes, until crust is golden brown and cheese is melted.
