Classic Peanut Butter Cookies

Yield: Makes 4 dozen



Cream together butter, peanut butter and sugars. Beat in eggs.

In a separate bowl, sift together flour, baking powder, baking soda and salt. Stir into batter. Put batter in refrigerator for 1 hour.

Roll into 1-inch balls and put on baking sheets. Flatten each ball with a fork, making a criss-cross pattern. Bake in a preheated 375 degree F. oven for about 10 minutes or until cookies begin to brown. Do not overbake.

“I always say stick with the classics. And this cookie recipe is very good. They're soft and full of peanut flavor. This recipe calls for unsalted butter. But you can of course use regular butter in it. Don't waste your money and buy unsalted butter just for cooking. Once the cookies are baked. Cool them on a sheet of tinfoil, and not a cooling rack. They're too soft and will fall through it. Enjoy.. ;)”
