Bite Sized Eggplant Pizzas
If you're looking to celebrate National Happy Hour Day like an Italian, you've come to the right place!

Ingredients
| 1 | cup | Mutti® Sauce For Pizza Parma (or any variety of Mutti® Sauce for Pizza) | |

| 1 | cup | Mutti® Cherry Tomatoes | |
|
|
|||
| 1 | eggplant | ||
|
|
|||
| 1 | mozzarella | ||
|
|
|||
| 1 | tablespoon | extra virgin olive oil | |
|
|
|||
| salt | |||
|
|
|||
| 2 | sprigs | fresh basil | |
|
|
|||
Directions:
Lightly brush 1/2 inch thick eggplant slices with oil and sprinkle with salt, then bake at 350 degrees F for 15 minutes.
Top with Mutti® Sauce for Pizza, mozzarella, and sliced Mutti® Cherry Tomatoes (Ciliegini), drained.
Bake for another 10-15 minutes.
Top with fresh basil before serving.
