CantaGold Grilled Chicken with Spicy Cantaloupe Salsa

Yield: 4 servings

Ingredients

1 CantaGold Melon

1/2 of a purple onion

8 radishes

1 jalapeno pepper

3 tablespoons cilantro

1 tablespoon honey

2 juiced limes

salt

pepper

4 boneless skinless chicken breasts

Directions:

Finely dice the CantaGold, onion, radishes, jalapeno and cilantro and mix together.

Add honey, lime juice, salt and pepper.

Salt and pepper 4 chicken breasts. Grill or pan-fry until cooked through.

Serve topped with salsa. Enjoy!
