Everyone's had a version of this beloved cheesy broccoli casserole at potlucks or holiday dinners, and it's not hard to see why it's such a popular recipe. Baking broccoli in a cheesy sauce (with mustard for a tangy kick) and topping it with a crunchy, golden bread crumb topping will entice even picky eaters to dig into this classic vegetarian side. You can play around with different cheeses in the recipe, or add rice to make it more filling. The recipe cooks in under an hour and is also convenient to make ahead of time, so it's ready to pop in the oven with zero prep time needed.

Heat the oven to 350 degrees F. While the oven is heating, stir the soup, milk, mustard and cheese in a 1 1/2-quart casserole. Add the broccoli and stir to coat. Season with salt and pepper.

Stir the bread crumbs and butter in a small bowl. Sprinkle the crumb mixture over the broccoli mixture.

Bake for 30 minutes or until the broccoli is tender. Serve hot.

Alternate Preparation: Add 2 cups cooked white rice to the broccoli mixture before baking.

Flavor Variation: Substitute mozzarella cheese for the Cheddar.

Make Ahead: Assemble as directed but do not bake. Cover and refrigerate for up to 24 hours. To bake, heat the oven to 350 degree F. Bake, uncovered, for 35 minutes or until the broccoli is tender.
