Fromagination's Wisconsin Fondue

Fromagination, a specialty cheese shop in Madison, Wisconsin, honors the state's Swiss heritage and alpine-style cheeses with this fondue.

Ingredients

Directions:

Combine the swiss, Grand Cru, Little Mountain, 1 cup wine and lemon juice in a medium bowl. Let stand at room temperature for least 2 hours, or cover and refrigerate overnight.

Add salt to a large saucepan. Starting in the salt, rub the cut sides of garlic on pan. Discard garlic. Add the remaining wine; bring to a boil over medium heat. Reduce heat to low. Gradually whisk in cheese mixture until mixture is smooth. Season with nutmeg and pepper to taste.

Transfer cheese sauce to a fondue pot. Heat on low to keep warm. Serve with dippers.

Recipe Tip:
Soaking the cheese, preferably overnight, in wine prior to melting not only adds flavor, but it helps to ensure a smooth fondue. Fromagination suggests using a Sauvignon Blanc wine in this recipe.
