Watermelon Summer Salad with Feta

Yield: 4 servings

Ingredients

6 ounces President Crumbled Feta

1 head romaine, chopped

12 dates, pitted

2 cups watermelon chunks

1 cup cucumber, peeled

1/2 cup sliced almonds

1 cup mint leaves

1/2 cup pomegranate seeds

Pomegranate Vinaigrette*

Vinaigrette salad dressing

Pomegranate juice or pomegranate vinegar

Directions:

Layer romaine with dates, watermelon, cucumber, and sliced almonds.

Sprinkle with crumbled President Feta, garnish with mint leaves and pomegranate seeds.

Serve with pomegranate vinaigrette*.

*For pomegranate vinaigrette:
Add pomegranate vinegar or pomegranate juice to your usual vinaigrette recipe or vinaigrette dressing.
