Polska Bean Stew

Yield: 6 servings (about 1 1/2 cups each)

Preparation Time: 15 min; Cook Time: 45 min; Total Time: 1 hr

Ingredients

1 package (14 ounces) Hillshire Farm Polska Kielbasa, cut into 1- inch slices

1/4 pound bacon, chopped

2 cups chopped onion

5 carrots, cut into 1/2- inch slices

1 can (15 ounces) red kidney beans, rinsed and drained

1 can (15.5 ounces) cannellini beans, rinsed and drained

1 3/4 cup (14 ounces) chicken broth

1 cup water

3 cloves garlic, minced

1 1/2 teaspoons hot pepper sauce (optional)

1/2 teaspoon dried thyme

1/2 teaspoon dried oregano

1/2 teaspoon dried sage

1/4 teaspoon ground black pepper

1 bay leaf

1 can (14.5 oucnes) petite diced tomatoes, undrained

Directions:

Cut sausage into 1- inch pieces; set aside. Cook bacon in 4 to 5 quart pan over medium heat, stirring occasionally 8 to 10 minutes or until browned.

Add all remaining ingredients except sausage and tomatoes. Bring to a boil; reduce heat to medium and cook, uncovered 20 minutes.

Add sausage and tomatoes. Return to a boil and cook 25 minutes longer or until mixture is slightly thickened. Remove bay leaf and serve.
