Persimmon and Pomegranate Salad

Yield: 4 servings

Ingredients

3 Fuju persimmons, peeled and chopped into 1/2- inch pieces, discard seeds

3/4 cup pomegranate arils

1 Granny Smith or Fuji apple, peeled, cored and chopped into 1/4- inch pieces

8 fresh mint leaves, thinly sliced

2 teaspoons lemon juice

1 teaspoon honey

Directions:

Gently toss all of the ingredients together.

Keeps for a couple of days in the refrigerator, but is best eaten the day it is made.
