Potato Salad with Honey Mustard

Preparation Time: 45 min

Ingredients

2 to 2 1/2 pounds red potatoes, quartered

2 tablespoons capers, drained and chopped

1/2 medium red onion, chopped

1/4 cup parsley, chopped

salt and freshly ground black pepper

1/2 cup Ken's Honey Mustard Dressing

Directions:

Cover potatoes with cold water, bring to a boil and salt the water. Boil potatoes until just tender, 12 to 15 minutes. Drain.

Combine cooked potatoes, capers, onions and parsley and salt and pepper to taste. Toss with Ken's Honey Mustard Dressing.
