Bacon, Ranch and Cheesy Chicken

Yield: 4 servings

Preparation Time: 10 min; Total: 35 min

Ingredients

4 slices Smithfield thick cut bacon

4 TOPS Fresh Boneless Skinless Chicken Breasts (about 1 3/4 pounds)

salt and pepper to taste

2 teaspoons Ranch seasoning (from Ranch dressing seasoning packet)

1 1/2 cups (6 ounces) TOPS Shredded Cheddar cheese

garnish with fresh basil leaves

Directions:

Cook the bacon in a large skillet over medium heat. Flip bacon once and cook until crispy, approximately 8 minutes. Transfer to a plate lined with paper towels. Drain all but 2 tablespoons of bacon fat from the skillet.

Season chicken with salt and pepper to taste. Return skillet to medium-high heat. Add chicken and cook until golden and just cooked through, approximately 6 minutes per side.

Reduce heat to medium and top chicken with ranch seasoning. Add cheddar, cover the skillet and cook, until cheese is melted and bubbly, approximately 5 minutes.

Sprinkle crumbled bacon over top and add fresh basil leaves.
