Preserve Your Favorite End-of-Summer Produce

Enjoy delicious summer produce all year long by canning and freezing your favorites. Take advantage of low prices on in-season fruits and veggies like peaches, pears, corn, tomatoes and peppers, and stock your kitchen with great meal options for the busy months to come.

Before freezing your favorite fruits, peel and toss with a few drops of honey and/or lemon juice to prevent browning. Use all winter long as a delicious addition to cakes, muffins, breads and pancakes.

Most vegetables freeze well but require blanching first to neutralize their enzymes and retain quality. To blanch, immerse veggies in boiling water for a few minutes before freezing. In the coming months, enjoy them in stews and casseroles or steam and serve as a side dish.

Canning is another great option for preserving delicious summer produce. For detailed instructions on canning your own fruits and vegetables, visit the US Department of Agriculture’s website (USDA.gov) and click on Food and Nutrition.
