Shrimp Toast
Shrimp toast may be prepared in advance and reheated quickly in the oven.

INGREDIENTS:
1/2 lb peeled, deveined shrimp, minced finely
5 water chestnuts, minced finely
1 teaspoon finely minced fresh ginger root
1 egg, lightly beaten
1-1/2 teaspoons cornstarch
1 teaspoon sherry
1/2 teaspoon salt
dash pepper
4 slices white bread, crusts removed
oil for deep frying (peanut oil is best)
INSTRUCTIONS:
Mix minced shrimp, water chestnuts and ginger root with egg, cornstarch, sherry, salt & pepper.
Spread mixture evenly over the bread slices. Cut each slice into 4 triangles. (dipping your knife blade in cold water will prevent shrimp mixture from sticking).
Heat oil to smoking point, and gently place bread triangles, shrimp side down, in oil. Reduce heat if necessary.
Deep fry a few pieces at a time, until bread is golden brown (about 1-1/2) minutes).
Drain on paper towl. Serve hot.
