INGREDIENTS:
3 Tbsp. margarine, softened
2/3 cup granulated sugar
1 egg
2 tsp. vanilla
1 Tbsp. skim milk
1 1/2 cups all purpose flour
1/2 tsp. baking soda
nonstick cooking spray
Cookie sheet
Colored sugar sprinkles or frosting, if desired
INSTRUCTIONS:
Preheat oven to 350°F. Cream margarine and sugar together on medium speed with mixer. Add egg, milk and vanilla and stir well. Combine flour and baking soda in separate bowl and add to wet mix, stir well. Cover hands with flour and roll dough into small balls. Roll each ball into the colored sugar, place on a cookie sheet sprayed with nonstick cooking spray, and pat down gently Bake 12-14 minutes. Cool on wire racks. HOLIDAY OPTION: Freeze dough for 30 minutes. Coat hands with flour, coat dough with flour, collect dough into a ball, and roll dough out (approx. 1/4" thick) onto floured surface. Cut cookies into holiday shapes and sprinkle with colored sugar. Bake as above. Or bake, cool & frost, if desired.
