Why are there color variations between fish?
There are several different reasons we see color variations in catfish fillets and nuggets. The most common reason is the corn content in the feed versus the soybean content. If the corn content is higher, you could see a yellow tint to the fillet.
Some farmers also state that color can vary due to the metabolism of the fish and pH levels in the pond. Another reason for color variation could be the feeding habits of the fish (scavenging versus solely manufactured feed).
