Preheat oven to 350 degrees F. Rinse the bird inside and out. Drain well. Grease the skin with a light spray of butter-flavored Pam and season with salt, pepper and paprika. Place in a roasting pan breast side DOWN. This keeps the breast meat from overcooking before the dark meat is cooked. Put in preheated oven and reduce temperature to 325 degrees F. After 1/2 hour, baste with a mixture of 3 cups apple juice and 1/2 cup soy sauce. Baste every half hour until the last hour, when you baste every 15 minutes.
1 12-18 lb. turkey (unstuffed) should roast for 3 3/4 - 4 1/2 hours, until a meat thermometer placed deep in the thigh reads 180 degrees, and juices run clear (not pink). It is a good idea to start checking for doneness a half hour before estimated finishing time.
To keep the bird juicy, let stand 15-20 minutes before carving.
