INGREDIENTS:
1- 1/4 lb.s boneless top sirloin steak
1 medium red bell pepper, cut into 1-inch pieces
1 medium onion, cut into 1-inch squares
2 cups hot cooked couscous
chopped fresh cilantro
Seasoning:
2 Tbsp. chopped fresh cilantro
2 Tbsp. olive oil
3 large cloves garlic, crushed
2 tsp. ground cumin
1 tsp. paprika
1/4 tsp. ground red pepper
INSTRUCTIONS:
In medium bowl, combine seasoning ingredients. Trim fat from steak. Cut steak into 1-inch pieces. Add beef, bell pepper and onion to seasoning, tossing to coat. Alternately thread beef and vegetable pieces onto four 12-inch metal skewers. Grill kabobs on the rack directly over medium coals for 12 - 14 minutes, turning once or broil 3-4 inches from heat for 8-10 minutes for medium rare to medium doneness, turning once. Serve on top of couscous. Garnish with cilantro.
