INGREDIENTS:
5-8 pound frozen turkey breast, thawed
1 tsp. canola oil
1/2 tsp. salt
1/2 tsp. black pepper
1 small to medium tart cooking apple, cored and cut into wedges
2 Tbsp. apple juice
1/4 cup brown sugar
1 Tbsp. Dijon mustard
INSTRUCTIONS:
Rinse turkey breast and pat dry with paper towels. Rub turkey with oil. Sprinkle inside and outside with salt and pepper. Place turkey breast, skin side up, in a shallow baking pan. Place apple wedges into breast cavity. Loosely tent with foil. Roast in a preheated 350 degree; F. oven for about 20 minutes per pound. In a small bowl, combine apple juice, brown sugar and mustard. During last 30 minutes, remove foil and baste turkey with apple juice mixture. Continue to roast until the internal temperature reaches 170 degree; F. Allow to rest for 10-15 minutes prior to slicing.
