Avocado & Tomato Salad

    INGREDIENTS:

  • 2 tbsp red wine vinegar
  • 2 cloves of garlic, minced
  • 1/4 tsp each salt and pepper
  • 1/3 tsp sugar
  • 2 tbsp olive oil
  • 4 plum tomatoes
  • 2 avocadoes
  • 1 package of romaine lettuce, torn into bite-size pieces

  • INSTRUCTIONS:

    Add vinegar to medium-size mixing bowl. Add garlic, salt, pepper and sugar. Gradually whisk in olive oil. Cut tomatoes into quarters and place in salad bowl. Cut avocado in half lengthwise and remove the pit. Peel avocado and slice into strips. Add to salad bowl. Pour vinegar mixture over tomatoes and avocado and toss to evenly coat. Cover with plastic wrap and marinate in the refrigerator for 1 hour. Toss with romaine lettuce right before serving.
