Oatmeal Pancakes

INGREDIENTS:
2 cups skim milk
1 Tbsp. Sugar
1 1/2 cups oats (quick or old fashioned, uncooked)
1 cup white flour (or whole wheat flour)
2 Tbsp. baking powder
1 egg
2 egg whites
1/4 cup vegetable oil, divided
INSTRUCTIONS:
Mix milk and sugar together in a small mixing bowl. Add oatmeal and stir to coat evenly. Measure flour and baking powder into another mixing bowl, stir together. Add oat mixture, eggs, and 3 tablespoons of vegetable oil to flour and baking powder. In a large skillet, heat remaining tablespoon of vegetable oil over medium high heat. Pour batter, in 1/4 cup portions, into skillet. When pancakes have a bubbly surface and have just begun to dry around the edges, turn to cook the other side. Serve immediately. Serving Suggestion: Blueberry Cinnamon Sauce
