Blueberry Cinnamon Sauce

INGREDIENTS:
2 Tbsp. sugar
1 tsp. cornstarch
1 cup frozen or fresh blueberries
4 Tbsp. water
1 Tbsp. Lemon Juice
1/4 tsp. cinnamon
INSTRUCTIONS:
Blend sugar and cornstarch in a saucepan. Stir in remaining ingredients. Cook over medium-high heat, stirring constantly, until mixture boils. Reduce heat to low; simmer 5 minutes, stirring occasionally. Add more water if thinner consistency is desired. Serve warm over pancakes or ice cream. Serving Suggestion: Oatmeal Pancakes Serving Size - about 1/4 cup
