Savory Chicken Enchiladas for Two

Yield: Makes 2 servings



1. To make sauce; In 1-quart saucepan over medium heat, in 1 tablespoon hot oil, cook green onions with chili powder and garlic until tender. Add soup and cayenne pepper. Heat to boiling, stirring occasionally. Remove from heat.

2. In medium bowl, combine chicken, cheese and 1/2 cup sauce.

3. In 8 x 8-inch shallow baking dish, spread 1/4 cup sauce.

4. In 8-inch skillet over medium-high heat, in 2 tablespoons hot oil, cook 1 tortilla, a few seconds on each side to soften. Remove to paper towel. Repeat with remaining tortillas.

5. Divide chicken mixture evenly between tortillas; fold sides over filling. Place enchiladas seam-side down in baking dish. Pour remaining sauce over enchilada. Bake at 350 F. for 20 minutes or until hot.

6. Serve with sour cream and sprinkle with parsley, if desired.
