Heat skillet over medium heat.
Spread 2 teaspoons mayonnaise on the outside of each slice of bread.
Place Swiss cheese and Monterey Jack Jalapeno cheese on the bread and top with the remaining slice of bread.
Grill until lightly browned, about 3 to 5 minutes and flip over; continue grilling until cheese is melted and the second side is golden brown.
For added heat, add a couple slices of jalapeno peppers.
