Preheat the oven to 400 degrees F
Saute onion and garlic in a skillet with olive oil until softened (about 5 minutes).
Spray the inside of a 7.8" gratin Lodge enamel coated baking dish with non-stick cooking spray.
Spread the sauteed onion and garlic in the bottom of the dish. Place the thinly sliced zucchini, yellow squash and red bell pepper in the baking dish vertically, in an alternating pattern. Sprinkle with thyme, salt and pepper.
Cover the dish with foil and bake for 30 minutes.
Remove the foil, top with cheese and bake for another 15 to 20 minutes until the cheese is golden brown.
