Cut off both ends of peppers, slice in half and remove seeds and membrane.
Brush both sides with olive oil and lightly season with salt and freshly ground black pepper.
Place skin side down on hot grill and cook until skin blisters, softens and starts to char (5 to 8 minutes depending on grill).
Turn peppers and grill until inner side is done (2 to 4 minutes).
