Prepare rice mix according to package directions, adding green onion during last five minutes of cooking.
In a large skillet, heat butter and garlic powder to medium hot. Add chicken breasts and cook for 8 to 10 minutes, turning once, or until chicken is no longer pink in center.
Overlap tomato slices on top of chicken; sprinkle with mozzarella cheese and serve chicken over hot rice.
